With Thanksgiving, Christmas and New Years’ Holidays are right around the corner you start thinking about cooking for the big party or get together you are planning and you think that pumpkins would be the perfect ingredient to highlight the fall harvest. Plus they are plentiful at the end of the year so why not figure out a way to incorporate them in to your daily meals. Being so large, they are great for making low cost meals for families on a budget. They are delicious, nutritious and very versatile. They are on sale everywhere this time of the year, both whole pumpkins as well as cans of pumpkin puree.

So I have put together a collection of recipes for you to use your leftover pumpkins. You can use pumpkin puree for a lot of these recipes or you can follow the recipe for making your own pumpkin puree from fresh pumpkins. There are also lots of recipes that include fresh pumpkin or pumpkin seeds so nothing goes to waste!
